Kiwis not only taste wonderfully fruity and exotic, but can also strengthen our immune system. As a citrus fruit with the highest vitamin C content, the kiwi surprisingly ranks ahead of the lemon, which is commonly used as a symbol of vitamin-rich food.

Kiwi Yogurt Ice Cream

Ingredients( For 6 Servings):

  • 360 ml yogurt
  • 8 kiwis
  • 150g sugar
  • 45 ml lemon juice
  • 30 ml orange liqueur 

Preparation:

Peel the kiwis and cut them roughly into cubes.

Mix kiwi cubes and sugar and let steep for 20 minutes.

Then puree all the ingredients finely in the blender.

Place in the ice cream maker and freeze according to instructions.


Coconut Pancakes With Kiwi Salad

Ingredients ( For 4 Servings):

  • 4 kiwis
  • 4 tbsp maple syrup
  • 2 tbsp lemon juice
  • Pancakes
  • 250 g flour
  • 3 level teaspoons of baking powder
  • 1.5 tbsp sugar
  • Salt
  • 4 eggs
  • 200 ml coconut milk
  • clarified butter

Preparation:

Peel and dice the kiwis. Then mix with the maple syrup and lemon juice.

Pancakes

Mix flour, baking powder, sugar and a pinch of salt in a bowl.

Add eggs and coconut milk and mix everything with a whisk to form a smooth dough.

Heat a non-stick pan and melt approx. 1/2 tablespoon of clarified butter in it.

Pour the dough into the pan in tablespoon-sized portions and fry over medium heat for 3-4 minutes on each side until golden brown.

Process the remaining dough in the same way, adding a little clarified butter if necessary.

Serve the pancakes with the kiwi salad.

Kiwi Strawberry Panna Cotta

Ingredients( For 6 Servings):

  • 6 ripe kiwis
  • 2 tbsp agave syrup
  • Panna cotta
  • 400 ml cream
  • 300 ml milk
  • 1 vanilla bean
  • 2 tsp vanilla sugar
  • 2 tbsp sugar
  • 100 ml cream, whipped until stiff
  • 4 sheets of gelatin
  • Strawberry topping
  • 500g strawberries
  • 2-3 tsp vanilla sugar
  • Zest of 1/2 lemon

Preparation:

Peel the kiwis and puree them finely with the blender.

Then sweeten with agave syrup, season to taste, pour into glasses and chill.

Panna cotta

To make the panna cotta,Soak the gelatine in cold water.

Put the cream, milk, vanilla pulp, vanilla pod and sugar in a saucepan and bring to the boil.

Remove the pot from the heat, remove the pod and quickly incorporate the squeezed gelatine into the hot mixture, stirring constantly.

Allow to cool slightly and finally fold in the whipped cream.

Pour the panna cotta onto the kiwi puree and let it solidify in the fridge for at least 3 hours.

For the strawberry topping, cut 50 g strawberries into small pieces and set aside.

Puree the remaining strawberries and mix with vanilla sugar and lemon zest and season to taste.

Mix the strawberry puree with the strawberry pieces and add to the panna cotta.

Let it rest briefly in the fridge again.

Kiwi Jam Recipe

Ingredients (For 1,000 g of pulp):

  • 1,000g kiwi
  • 1 packet of vanilla sugar
  • 2 tbsp lemon juice
  • 500 g preserving sugar 2:1

Preparation:

Peel the kiwis. Cut them into pieces.

Bring all ingredients to the boil together with the preserving sugar.

Simmer for 4 minutes while stirring, making sure nothing burns.

Make a gelling test with a small blob on a cold saucer. If it sets within a short time, the jam is ready.

Remove any foam with a slotted spoon, but you can also simply stir it in.

If you want, you can chop the whole thing up with a hand blender, but that's usually not necessary.

Then pour the hot mixture into hot-rinsed jars, close and leave to cool upside down.
