Ingredients:

  • 2 chicory
  • 2 oranges
  • 1 tsp honey
  • 1 tbsp light vinegar, e.g. B. white balsamic vinegar
  • 2 tbsp walnut oil
  • salt and pepper
  • Walnut kernels if desired

Preparation:

  1. Wash the chicory and cut it into rough strips.
  2. Remove fillets from 1.5 oranges and squeeze out the remaining orange half.
  3. Mix the orange juice, honey, vinegar, oil, salt and pepper well.
  4. Add chicory and orange fillets and let sit for half an hour. Sprinkle with chopped walnuts if desired.
  5. A great appetizer for three to four people.

Baked Chicory With Cheese Sauce

Ingredients:

  • 6 chicory
  • 6 slices of cooked ham
  • 4 tbsp butter
  • 3 tbsp flour
  • 500 ml milk
  • 150 g cheese (Gouda or mountain cheese)
  • Salt, pepper, nutmeg

Preparation:

  1. Cut out the end of the chicory in a wedge shape and let the vegetables cook in salted water for about 10 minutes. Drain well or dab with kitchen roll.
  2. Melt the butter in a saucepan, dust with flour and sauté while stirring. Slowly add the milk and stir until a light sauce is formed. Let simmer for about five minutes, stirring occasionally.
  3. Grate cheese and add to the sauce. Season with salt, pepper and nutmeg.
  4. Wrap a slice of ham around a chicory, place in a greased baking dish and pour the sauce over it. Bake at 200 degrees for a good 20 minutes.
  5. A delicious dinner for three to four people with a piece of baguette.
