Elderberry Recipes – Tasty And Healthy
The processing of the fresh berries is extremely important because they are inedible raw and cause stomach pain and nausea. Only when the berries are heated do they lose the ingredient glycoside, which releases the extremely unhealthy hydrogen cyanide.
Juice Elderberries
Large quantities of elderberries are usually produced during a harvest. We therefore recommend juicing in a steam juicer. The finished juice lasts in hot-washed bottles at least until the next harvest.
- For colds, elderberry juice is mixed with hot water or hot tea in a 1:1 ratio and drunk several times a day.
- The juice can be used to create delicious jellies, the famous elderberry soup or desserts.
Hollerkoch
- The Hollerkoch goes well with many desserts, such as ice cream, pudding, pancakes, yoghurt and steamed dumplings.
- It tastes wonderfully fruity on a breakfast bread.
- The elderberry chef also makes a great pie filling.
Elderflower Syrup
- 25 – 30 elderflowers
- 3 liters of water
- 2kg sugar
- 5g citric acid
- 2 ORGANIC lemons
Place the pot in a dark and cool place for 6 days, stirring once every day. Then bring to the boil vigorously and pour into sealable bottles. Stored in a cool and dark place, at least until the next harvest.
This aromatic elderflower syrup is drunk diluted with water or Prosecco.It feels tasty and healthy for us.
Elderberry Rose Vinegar
- 3 elderflower umbels
- 2 handfuls of rose petals (fragrant roses)
- 0.75 l fruit vinegar
- 4-5 fresh strawberries
Place all cleaned flowers in a large glass container. Pour over the fruit vinegar and add the quartered strawberries. Now let stand in a cool, dark place for 4 weeks, shaking once a day.
This elderflower vinegar goes perfectly with green leafy salads, but can also be used to stimulate metabolism and improve your mood. To do this, drink 1 tablespoon of vinegar diluted with a glass of mineral water.
