Jerusalem Artichoke Chips

Healthy chips – brilliant, right? And first the list of ingredients, you need exactly one ingredient: the Jerusalem artichoke itself.200 grams is enough for two servings. You peel them, if possible with the thin skin, or unpeeled if necessary, and slice them into thin slices.

Let the slices dry in a preheated oven at 130 degrees for a good half hour with the oven door slightly open. Turn once in between.If you like it spicier, you can of course refine the slices as you wish - but in order to preserve the gentle aroma of the Jerusalem artichoke, we do not use spices here.

Jerusalem Artichoke Soup With Curry

You don't have to choose between the tubers, because Jerusalem artichokes and potatoes get along perfectly. For example in the form of this delicious soup.

Ingredients For Four Servings:RE

    • 500 g Jerusalem artichoke
    • 250g potatoes
    • 1 liter vegetable broth
    • 2 tablespoons oil
    • 1-2 tsp curry powder
    • 1 tsp sugar
    • 1 tbsp honey
    • Salt pepper
    • sour cream if desired

Preparation:

Peel all the tubers and dice them. Then briefly sauté the Jerusalem artichoke and potato cubes in hot fat, deglaze them with vegetable broth and let them simmer for a quarter of an hour over medium heat.

Now puree finely and season with the spices.

Jerusalem Artichoke Gratin

A delicious accompaniment to many dishes - you simply have to try this puree!

Ingredients For Four Servings:

    • 600 g Jerusalem artichoke
    • 250 ml milk
    • 2 tbsp grated cheese
    • 1 tbsp crème fraîche
    • 1 tbsp butter
    • Curry, paprika powder, nutmeg, salt, pepper

That's How It Works:

1.Wash and peel the Jerusalem artichoke tubers and slice them into approx. 3 mm thick slices. Bring them to the boil in a saucepan with the milk. Then stir in the spices and crème fraîche.

2.Grease a baking dish with butter and pour the Jerusalem artichoke-milk mixture into it. Bake on the middle rack in the oven at 160 °C for about half an hour. Five minutes before the end of the baking time, sprinkle with grated cheese and bake. Splendid!
