Easily Make Your Own Yeast From Dried Fruit

Yeast has been sold out in almost all supermarkets since the Corona pandemic. Nevertheless, you don't have to go without homemade baked goods like bread, rolls, cakes and homemade pizza.

To remedy this, in the following article we present two proven methods with which you can easily make and grow yeast yourself from dried fruit.

Make Wild Yeast With Just Three Ingredients From Dried Fruit

Ingredients

  • 50 g - 70 g unsulphured, dried dates or other dried fruit (for example plums or apricots)
  • 30g sugar
  • 500 ml water (lukewarm)
  • 1 screw-top jar 1.5 liters

Starting Wild Yeast – Preparation

Thoroughly clean the screw-top jar and boil it once. The container must be absolutely free of germs and dust. Then dry the container carefully.

Heat the water until it is lukewarm and pour it into the screw-top jar.

Add sugar and shake the glass until the sugar is completely dissolved.

Add unsulfured dried fruit and close the container.

Place the screw-top jar in a warm place. An ambient temperature of 30 degrees Celsius is optimal.

Shake the jar every morning and evening to prevent mold from forming.

To allow the gases formed to escape, open the container briefly after shaking.

After 5 to 7 days, bubbles will appear in the water and it will smell like yeast.

If mold forms, the mixture must be thrown away and started again.

Using Homemade Wild Yeast

If the yeast water is still fresh, around 200 to 250 milliliters are used for 500 grams of flour because the wild yeast has not yet fully developed its driving force. It is recommended to let the dough rise overnight.

Easily Draw New Yeast From Yeast Water

After the first yeast water has been made, new yeast can be continually grown from the batch. The added yeast is ready faster than the original batch.

For Raising New Yeast - Preparation

Ingredients

  • a quarter of the yeast water of the original batch
  • 1 piece of dried fruit
  • 30 grams of sugar
  • lukewarm water
  • 1 screw glass

Preparation

Pour 1 quarter of the originally prepared yeast water into a boiled, well-dried new screw-top jar.

Add 1 piece of dried fruit and 30 grams of sugar.

Fill the liquid in the glass to 500 ml with lukewarm water.

Set up the mixture as in the first batch, shake and ventilate twice a day.

Because the newly prepared mixture is already partially fermented, the yeast matures faster and can be used for baking after 2 to 4 days.

Shelf Life Of Yeast Water

Yeast water can be stored in the refrigerator for approximately 8 weeks.

Before using the yeast, it should be taken out of the refrigerator the evening before, at least several hours beforehand, so that the yeast cells that are inactive due to the cold are reactivated by the ambient heat.

The homemade help can also be frozen and thawed if necessary.If you never want to buy yeast again, you should definitely try this method of making yeast.
