The Classic: Kale With Pee
Northern lights already know this variant, everyone else should definitely get to know it. Because the combination of kale with pee , a juicy sausage, is unbeatably good. Hearty and really good home cooking that you can easily prepare.
Ingredients(For 3-4 Servings):
- 2 kg of kale
- 2 onions
- 500g smoked bacon
- 3-4 pee sausages (smoked grützwurst)
- Water
- Frying fat
- Salt, pepper, allspice
Preparation
Clean and wash the kale and cut it into coarse pieces .Dice the onion and fry it together with the bacon in a little fat, then add the cabbage and sauté it. Then add water until the kale floats slightly .Cover and simmer for about 1.5 hours, stirring occasionally. If necessary, add water.
Ten minutes before the end of the cooking time, put pee on the cabbage and cook with it .Season with spices before serving. Serve classically with boiled potatoes.
Kale Risotto With Pears And Bacon
Also hearty, but a little more modern than the classic, is a kale risotto.
Ingredients (For Four Servings)
- 200 g risotto rice
- 600 ml poultry stock
- 200g kale
- 1 ripe pear
- 3 tablespoons butter + 1 tablespoon cold butter
- 2 onions
- 100g bacon
- 50g Parmesan
- Salt pepper
Preparation
Dice the bacon and onions and chop the washed kale into bite-sized pieces. Peel the pear and cut it into cubes about 1 cm in size .Now heat the remaining butter and sauté diced onions, diced bacon and chopped kale. Add the pear cubes and heat for about five minutes.
Remove the pot from the oven and fold the kale and pear mixture into the rice. Reserve a little of the mixture for decoration .Stir in the cheese and cold butter, season with spices, decorate with the remaining kale and pear mixture and serve immediately.
Tip: Use vegetable stock instead of chicken stock and omit the bacon and the kale risotto also tastes wonderful as a vegetarian. Instead of bacon, you can fold in 2 tablespoons of roasted pumpkin seeds.
Curried Kale
A modern side dish for fish and poultry that you should definitely try.
Ingredients( for four servings)
- 1 kg of kale, cleaned
- 1 onion
- 1 clove of garlic
- 2-3 cm fresh ginger
- 1 apple
- 1 tbsp vegetable oil
- 150 ml vegetable broth
- Curry powder, salt, cayenne pepper
Preparation
Roughly chop the cleaned kale. Dice onion, finely chop garlic and ginger. Peel the apple, core it and cut it into narrow wedges .Heat 1 tablespoon of vegetable oil and sauté apple slices in it for about two minutes. Then dust with approx. 1/2 teaspoon of curry powder and steam together for a minute. Remove.
Now fry the onions, garlic and ginger in the frying fat until translucent, add the kale and heat for five minutes, stirring regularly. Pour in the vegetable broth and simmer covered over medium heat for about ten minutes.
